Stuðlaberg Gin

Blueberry Gin Sour

Ingredients

60 ml Stuðlaberg Gin
22.5 ml blueberry syrup
22.5 ml lemon juice
30 ml pasteurised egg white
3 blueberries on a pick

Method

Shake everything without ice for 15 seconds, add ice and shake again. Fine strain into a chilled coupe and garnish with the blueberries.

Blueberry syrup: Simmer about 225 g blueberries, 200 g sugar, 240 ml water and 1½ tsp lemon juice over a low heat for 10 minutes. Cool and strain.
