Stuðlaberg Gin

Gin Basil Sour

Ingredients

60 ml Stuðlaberg Gin
22.5 ml lemon juice
10 ml rich simple syrup (2:1)
15 ml pasteurised egg white
12 basil leaves + 1 to garnish
A tiny pinch of salt

Method

Muddle the basil in a shaker, add the rest and shake with ice. Strain off the ice, shake again without ice and fine strain into a chilled stemmed glass. Garnish with a basil leaf.
