Maple Rum Sour

Ingredients

60 ml Hvítserkur Dark
22.5 ml lemon juice
22.5 ml maple syrup
30 ml pasteurised egg white
2 drops Angostura
A small piece of waffle

Method

Shake first without ice, then with ice. Fine strain into a low glass, add two drops of Angostura to the foam and a small piece of waffle on the rim.
