Rökkvi Chocolate Mousse

Serves four.

Ingredients

8 macarons (2 per glass)
6 tbsp Rökkvi over the macarons
100 g chocolate
2 egg yolks
2.5 dl cream
2 tsp sugar
4 tbsp Rökkvi in the mousse

Method

Crumble macarons into the bottom of four glasses and pour 1½ tbsp Rökkvi over each. Melt the chocolate and let it cool. Whisk the yolks and sugar until light and pale. Lightly whip the cream. Gently fold everything together with the Rökkvi, spoon over the macarons and chill until set.
