Rökkvi Devil's Food Cake

Rökkvi takes the place of the coffee – and the cake disappears fast.

Ingredients

• Cake: 220 g flour
• 180 g sugar
• 80 g cocoa
• 2 tsp baking powder
• 1 tsp bicarbonate of soda
• 1 tsp salt
• 2½ dl milk or cream
• ¾ dl neutral oil
• 2 eggs
• 1 tsp vanilla extract
• 2½ dl Rökkvi
• Icing: 200 g icing sugar
• 60 g cocoa
• ½ tsp salt
• 80 g soft butter
• 1 tbsp Rökkvi or cold coffee
• 1 tsp vanilla extract
• 5 tbsp cream

Method

Heat the oven to 180°C. Mix the dry ingredients, then gently stir in the milk, oil, eggs, vanilla and Rökkvi – the batter is thin. Divide between two greased 23 cm tins and bake for 20–30 minutes, until a skewer comes out clean. Cool. For the icing: mix the dry ingredients, add the butter, Rökkvi and vanilla and finally the cream until smooth. Spread between the layers and over the whole cake.
